Leilas American Pancakes




My family are in town from Sweden and this morning
we decided to make them a big good ol' American
breakfast with scrambled eggs, sausage,
bacon, toast and of course pancakes. yum.

This recipe is actually from a Swedish chef/baker
called Leila Lindholm, she is my baking hero and every single
recipe of hers I've tried has turned out un-freakin-believable.
Ok, back to the pancakes.. plain and simple: they are a m a z i n g
and way better than any recipes I've found
in any American cookbook.


8 Pancakes
3.5 dl (1.5cups) flour
2 tsp baking powder

0.2 tsp salt

2 tbs sugar

2 tsp
vanilla sugar (or 1tsp liquid vanilla extract)
2 tbs melted butte

2.5 dl (1 cup) milk (not fatfree!)
1 egg



Mix your dry ingredients. In a separate bowl mix milk, egg
and butter. Mix the liquid with the flour mixture until smooth.
Fry on medium heath until golden brown. Serve with your favorite
pancake topping (I had mine with swedish blueberry jam
and whipped cream. mmm).

O M G chocolate cheesecake

This chocolate cheesecake will have you go O M G.
It's amazing and you better make it for a large group
of people of throw it away after you've had one piece,
if not you'll keep running back and fort to the fridge
until its all gone (trust me.. I know!).



You will need
1 x 8oz bag semi sweet chocolate chips 24oz cream cheese (I used fat free and it came out great!) 1 x 14oz can sweetened condensed milk 20 creme filled cookies (I used fakie oreos from Ralphs) 4 (preferably organic) Eggs
2tbs vanilla extract

1.) Put oven on 300f
2.) Melt chocolate in a microwave safe bowl.
3.) Mix creamcheese in bowl with electric blender
until soft and smooth. Add vanilla and
eggs (one at a time) and blend
until smooth. Add melted chocolate.
4.) Crush your cookies in a ziplock bag
5.) Take a 9-10' springform pan and
evenly divide the cookie crumbs all
over the bottom and up along the sides.
6.) Poor in your cream cheese mixture
7.) Bake in oven for 1hr. Turn oven off
after 1hr and let cheesecake stand for another
30 min (oven turned off and door closed).

Take out of oven and let the cake cool down.
Let chill in fridge for 7-8hrs. Serve w/
whipped cream, ice cream or just
dig in. No matter how you choose to
eat it, trust me, you will go O M G!
